Chick chick stew
Using the olive oil brown cubed chicken (thigh fillet works best) over a high heat.
Add crushed garlic, diced brown onion, basil, 1/2 cup mushrooms and 1tbs tomato paste
Remove from heat
Put in a casserole dish and add one can chopped tomatoes, 2 cups storebought liquid stock, 1 cup frozen peas, 1 can chickpeas and any other vegies you like (just make sure the mixture is covered by liquid)
Cook on a medium heat for at least 2 hours in the oven
Serve on brown rice, couscous, mashed potato etc with cheese and pepper
I cook this ALL the time, you can mix and match any veg you like, I love it, my 18 month old loves it and so does everyone and ts so easy
