Yes i think it should be fine, but dont put the full length ramen noodles in there, break the block in halfso that it wont get all wound up in a ball when you stir the dish or when u try to serve it.
If it seems to watery for you, just do the cornstarch trick, or melt butter in a pan and slowly add flour and stir until golden brown- then add the liquid from the recipe and incorporate it all together.

Ramen noodles will work but will not need as much cooking as the wide noodles. The texture of the finished dish will also be altered both because of the size of the noodles and because of the difference in the ingredients in the noodles. Wide noodles are made from eggs and flour while Ramen noodles may be made from other ingredients and may not have eggs
Yep, or you could even serve it over rice or mashed potatoes if you wanted to.
