Freeze it until you need it or buy it on the day you need it.I have a recipe that calls for a 3 to 4 lb rotisserie chicken.?
Yes, the rotisserie chicken is the already cooked kind from the grocery store. I wouldn't buy it on Thursday though and keep it until Monday. Can't you shop on Saturday or Sunday?
Eh... I think I'd stop in after work on Monday and pick up the rotisserie chicken. They're easier to pick the meat off when warm anyway.

OR (brain wave just hit!)

Buy it Thursday, pick it Thursday, then freeze the meat.
I do this all the time. I buy several chickens already cooked, then pick all the meat off, and freeze in recipe sized portions in freezer bags. Works like a charm!
it's probably best to buy the chicken fresh on Thursday then.
