Toss with olive oil, quartered slightly squeezed lemons, lots of garlic, plenty of oregano, salt and pepper. Other spices you might like too--sometimes I add paprika, lemon-pepper
Roast at 450* til cooked thru--about 25 minutes depending on size of pieces.

Chicken Fajitas
Cut the chicken into strips, season with a mixture of a little bit of onion powder, garlic powder, and red pepper, a generous sprinkling of salt and chili powder (I use mexican chili powder but regular will be fine).
Saute chicken until browned on each side and cooked through. Remove from pan.
Add green and red bell pepper and onion strips and saute in a little vegetable oil until soft but still have good color. Serve with tortillas and voila! You have fajitas. you can serve with lettuce and tomato and salsa if you have them available- if not that's fine, too, it is a really healthy meal.

Garlic Chicken
4 small boneless skinless chicken breast halves (1 lb)
20 cloves garlic, peeled
戮 cup fat-free reduced-sodium chicken broth
录 cup Kraft light classic Caesar Dressing
录 cup Kraft grated Parmesan cheese
1. Heat large nonstick skillet on medium-high heat. Add chicken and garlic; cook 4 min., turning chicken after 2 min.
2. Stir in broth and dressing; cover with lid. Cook chicken 4 min on each side or until done.
3. Sprinkle with parmesan. Remove from heat. Let stand, covered, 1 min.
4. Serve with roasted vegetables.
How I make Roasted Vegetables:
*Place carrots and 1 inch cubed potatoes on a roasting pan, cover with olive oil, sea salt and seasoning and cook in a 425 degree oven for 25 minutes or until tender (stir halfway through cooking).
For seasoning I use a combination of black pepper, sea salt, garlic powder, onion powder, smoked paprika, and a dash of red pepper

Lime Garlic Chicken
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
6 skinless, boneless chicken breast halves - cut into strips
1 cup butter
2 medium heads garlic, diced
1 lime, halved
lemon pepper to taste
Mix flour, salt and pepper together in a resealable plastic bag. Add chicken, seal bag and shake to coat. Set aside.
Melt butter in a large skillet over medium heat. Add garlic and saute 3 to 4 minutes, until it starts to change color. Saute coated chicken strips with butter and garlic for 10 to 15 minutes, until cooked through and juices run clear.
Squeeze lime over chicken and sprinkle with lemon pepper. Serve hot.

Grilled Chicken Kabobs. Simple with a few of your favorite vegetables, drizzle with olive oil, salt and pepper to taste, place on grill until meat is done.
