What's a good chicken recipe?

Chicken and Rice





2 cups white rice


1 can cream of mushroom soup


1 can cream of celery soup


1 cup milk


boneless chicken breast (2 or 3)


garlic salt


onion salt





Mix rice, cream of mushroom and celery soups, milk pour some in pan, set as many chicken breasts in a pan as you can fit, sprinkle garlic salt and onion salt on top of chicken. Pour the rest of the mix on to cover chicken. Cover pan with tin foil. Bake at 350 degrees for 1hr to 1hr 1/2. Make sure you use a tin pan and make sure you cover with tin foil or it will just burn to the bottom of the pan.

Chicken %26amp; Dumplings-like my Grandma made!


Ingredients:


2-1/2 to 3 lb. Chicken (whole)


4 C Water


2 C Chicken broth


1 Carrot, roughly chopped


1 Medium onion, cut into quarters


1 Stalk of celery, roughly chopped


1/2 t Salt


1 C Milk


1/4 t Freshly ground pepper


.Dumplings:


2 C All-purpose flour


1/2 t Baking soda


1/2 t Salt


3 T Shortening


3/4 C Buttermilk


Preparation:


Place the chicken in a Dutch oven, and add the water, broth, carrot, onion, celery and salt. Bring to a boil, cover and lower heat. Simmer for 60 to 70 minutes, or until tender and chicken is done. Remove chicken and allow it to cool enough to handle. Remove the carrot, onion and celery pieces from the broth and discard. Reserve the broth.


Bone the chicken, discarding all skin and bones, and cut meat into bite-size pieces. Set aside.





The Dumplings:


Combine the flour, baking soda and 1/2 teaspoon salt; cut in the shortening with a pastry blender or two knives until mixture is consistency of coarse meal. Add the buttermilk, stirring just until dry ingredients are moistened. Turn dough out onto a floured surface and knead 4 or 5 times -- no more.





For drop dumplings, pat the dough down to a 1/4-inch thickness, and pinch off 1-1/2-inch pieces.





For rolled dumplings, roll the dough to a 1/4-inch thickness, and cut into 3'; x 1'; strips.





Bring the chicken broth to a boil, and stir in the milk and pepper. Correct seasonings, if desired.





Drop dumplings, one or two at a time, into the boiling broth and reduce heat to medium-low. Stir from time to time to make sure dumplings do not stick together. Cook dumplings 8 to 10 minutes. Add the boned chicken to the mixture and simmer until heated through. Remove from heat. Makes 4 to 6 servings.

I make this once a week and there are never left overs, you gotta try it!





12 ounces spaghetti


1 1/2 teaspoons vegetable oil


1/2 teaspoon salt


1 1/2 tablespoons butter


1/4 cup chopped onion


1 clove garlic, minced


2 (10.75 ounce) cans condensed cream of mushroom soup


1 cup chicken broth


1 teaspoon seasoning salt


3 cups shredded American cheese


4 cups cooked and cubed chicken


2 tablespoons chopped fresh parsley


2 tablespoons diced red bell pepper








Preheat oven to 350 degrees F (175 degrees C).


Cook spaghetti according to package directions, add oil and salt to cooking water. Drain.


In large saucepan or Dutch oven over medium heat, melt butter. Add onion and garlic. Cook, stirring occasionally, 2 minutes. Add soup, broth, seasoned salt and 1 1/2 cups of the cheese. Cook and stir until cheese melts and mixture is smooth. Add spaghetti and chicken or turkey. Mix well. Transfer to 2-quart baking dish. Cover with foil.


Bake at 350 degrees F (175 degrees C) for 30 minutes or until hot and bubbly.


Remove foil. Sprinkle with remaining 1 1/2 cups. cheese. Continue baking 2 minutes or until cheese melts. Sprinkle with parsley and bell pepper.

I just made this for my wife's family that just visited recently and it went over VERY well(her grandmother was really impressed)





For sides I did Baked potatoes and my awesome Stuffing balls.





The stuffing balls are easy, simply dice up about a half cup of celery and a half cup of onion, then saute them a bit till soft in some butter. Then cook up a pound of breakfast sausage and drain. Then make the stuffing mix by the directions on the box/bag. Then add an egg, the celery and onion, and the sausage to the stuffing, and mix well,. Form into balls about the size of a golf ball. Place them on a cookie sheet and bake at 350 until the outsides are crispy.





I also made some brown gravy, a perfect topper for everything and it couldn't have been better!





I have added this dish to my recipe box and it will for sure be one of my 1 hit knock out meals for years to come.
Chicken Parmesan, my fiance and folks love this.





Boneless skinless chicken breasts ( I usually use 6, but depends on number of people)





Jar of Prego Spaghetti Sauce ( I use garlic/mushroom, but choose one of your liking)





Aged Swiss Cheese or regular swiss.





Pour about 1/2 spaghetti sauce in bottom of baking dish. Place chicken on top, cover with remainder spaghetti sauce, and then place 1-2 pieces of cheese on top of each piece of chicken. Cook for 35 minutes at 350degrees. Usually during cooking i remove pan and scoop any cheese that has slid off the chicken back onto it. This is good with out having to put over noodles, but I typically make noodles as just a side item or option.

Today, I made it vegetarian with extra firm tofu, rinsed chick peas, and of course, the garnish of chopped onions, cilantro, and cucumber.





But no matter what you put in it (chicken for most) the sauce goes like this:





2 T Canola Oil


1 small onion, diced finely


1 tsp. chopped garlic


1/2 tsp. fresh ginger


1 T brown sugar


2 T masala spices (email me for the exact ingredients and I'll direct you)


1/2 small can of tomato paste


1 can diced tomatoes


3 spoonfuls of yogurt


1/4 cup heavy cream


1 tsp. corn starch





Optional Ingredients:


Chunks of chicken breast, tofu cubes, chick peas, peas, spinach, paneer





Garnish:


Chopped cilantro, red onion, cucumber (For me, this is a must!)





Begin by gently sweating/sauteeing diced onions in the oil, in a large skillet. After about 10 minutes, add the 2 T of spices and stir. Cook for another 2-3 mins on low/medium heat. Add in the paste and tomatoes, sugar, ginger %26amp; garlic. Stir and let simmer.


Add in your optional chosen ingredients and continue to cook. If you use chicken, add 1/2 cup water to your sauce and let simmer until the water reduces and the chicken is cooked through. If you use tofu or other vegetarian ingredients, do not use the extra water.





Seperately, mix corn starch into the yogurt and cream %26amp; mix together. Let sit 1 minute to dissolve %26amp; mix again.





Once the optional ingredients are cooked or heated through, add in the yogurt/cream/cornstarch mixture and let come to just a boil, then reduce heat to low.


Stir to combine fully.





Serve with Jasmine Rice, naan, and the garnish.

Chicken loco





Chicken thigh skinless and boneless


1 pk Fajita seasoning


2 can Ro-Tel diced tomatoes and chilies


2 can chicken broth


1 cup rice





In crock pot add first four ingredients cook on high for 2 hours take chicken out and shred with fork. put back in crock pot with rice and cook till rice is tender. Serve on warm tortilla. So good and makes alot.


***If can't find boneless skinless thighs use bone in with skin on and de-bone and de-skin befor u shred****
