Sugar pie is right, Buttermilk is the best. Use milk if you don't have buttermilk
or make your own
* Milk (just under one cup)
* 1 Tablespoon white vinegar or lemon juice

Using butter will give you a crispier chicken.
Try melting some butter and brushing it on the chicken, then cover in seasoning and bake.
When I roast chicken (whole), I brush it with melted butter, then I sprinkle salt and pepper. Stick a lemon (poked with holes) in the cavity. Bake until thermometer reaches internal temperature of 180 degrees Fahrenheit, or 82 degrees Celsius. When you take it out, let it rest covered for about 15 minutes before carving.
Obviously butter would have more calories; milk is your lower-fat option. Whichever you prefer.
What would be best is BUTTERMILK, but you can't make that from butter + milk. So nevermind.
ar you sure that your recipe doesn't mean Buttermilk ? It sounds a bit peculiar to me to dip in butter . I would dip them in eggs, flour, and bread crumbs instead but I do use Buttermilk as well ..

...in your case I would say milk.
