Vegetarian chicken 'n broccoli recipe?

i miss that chinese dish so much! if anyone knows the vegetarian recipe for it it will be greatly appreciated.Vegetarian chicken 'n broccoli recipe?
Title: MANDARIN CHICKEN AND BROCCOLI

Yield: 3 servings





1 lb Boneless chicken breasts,


-skinned


Salt and pepper


10 oz Frozen broccoli spears


1 tb Cornstarch


3/4 c Orange juice


3/4 ts Marjoram leaves


1/2 ts Ground ginger


11 oz Mandarin oranges, drained


Hot cooked rice





Cut chicken breasts, diagonally, into 1/2鈥?slices.


Arrange in a circular pattern in a 9鈥?round baking


dish; sprinkle with salt and pepper. Cut frozen


broccoli into 2鈥?lengths; arrange over chicken. Cover


with plastic wrap and microwave on high 6 minutes.


Move chicken and broccoli and microwave on high 3 to 5


minutes or until chicken is no longer pink. Drain 1/4


cup liquid from cooked chicken and broccoli into a 4


cup glass measure; set chicken and broccoli aside.


Combine cornstarch, orange juice, marjoram and ginger.


Add to reserved liquid. Stirring midway through


cooking, microwave on high 3 minutes or until mixture


thickens. Add oranges and microwave on high 1 minute.


Arrange chicken, broccoli and rice on a serving


platter; spoon sauce over top.

SZECHUAN-STYLE CHICKEN AND BROCCOLI

2 Chicken breasts* -- split; boned and skin ed


1/3 cup PACE picante sauce


20 milliliters Garlic -- minced


2 tablespoons Soy sauce


1 tablespoon Ginger -- shredded


1 tablespoon Water


1 tablespoon Cornstarch


1 1/2 cups Broccoli flowerets


1/2 teaspoon Sugar


1 Red pepper


3 tablespoons Vegetable oil


1 Onion -- thin wedges





(We use much less meat than this; either 1 whole chicken breast or 1/2 lb.ground turkey or ground chicken.) Cut chicken into 1-inch cubes. Combine picante sauce, soy sauce, water, cornstarch and sugar in small bowl; set aside.Heat 2 T. of the oil in wok or large skillet over medium high heat. Add chicken and stir-fry 3 to 4 minutes or until cooked through.Remove with slotted spoon. Add remaining oil onion, garlic and ginger to skillet; stir-fry 30 seconds. Add broccoli and peppers; stir-fry 3 minutes or until vegetables are crisp-tender. Add chicken and picante sauce mixture;


stir-fry about 1 minute or until sauce thickens.





I don't cook the meat and vegetables separately. It takes a little longer, but there are less dishes to wash and you only need 2 T. oil. I cook the garlic and ginger for a few seconds before throwing the meat in. I cook the meat for 20 or 30 seconds, and then throw in the vegetables one at a one at a time, stirring 5 or 6 seconds between each addition. I cook everything for 5 or 6 minutes, stirring, of course. Then I pull everything up on the sides of the wok and pour the sauce in the center, stirring the sauce until thickened. Then I stir everything together for a minute or two. It's done. I use high on my stove when cooking with my wok on a fire-ring. This is easy and delicious and lower in sodium than many of the bottled sauces.

Lu's special chicken sauce


1 bn Green onions -- sliced


Black pepper


White pepper


Cornstarch in water


Ginger


Garlic


1/2 pound Mushrooms -- sliced


Wine





Marinate meat in Lu's Special Sauce.





*Cut broccoli Florettes into fairly small sections (bite size). Cut off


tough outer portion of broccoli stems and slice thinly.





Heat wok with a little oil in it. Add garlic and ginger and stir-fry. Add


meat in marinade,green onions, and stems.





Cook until meat is almost done. Add broccoli florettes, mushrooms,


cornstarch and a little wine (or beer). Cook until broccoli is done.Vegetarian chicken 'n broccoli recipe?
i believe it's beef and broccoli, and to anyone saying to this person that it contradicts their beliefs, maybe they do it for other reasons. Not everyone is the same kind of vegetarian (some do it for health reasons, which i don't buy. Some do it for the sake of the animals, which many of are likely to be eaten by animals themselves anyway.)





Anyway, substitute beef, or don't eat it, or just go back to eating it.
Well, what's in it besides the chicken that isn't vegetarian? I've never heard of Chinese chicken %26amp; broccoli (but I only really started to like Chinese food a few years ago, so...). You could substitute tofu or seitan for the chicken. Whatever sauce is used is probably vegetarian, unless it contains chicken broth or something, but that can easily be replaced with veg. broth. So I would say just find an omni recipe for it online %26amp; veg'nize it, or google a vegetarian recipe for it.

leave out the chicken and it's vegetarian, try tofu or tempe
You don't want to eat meat, but you want the TASTE of it??? What's the point of being veggie/vegan if you want the taste of meat?
