Here you is my Momma's best recipe.
Slow Cooker Chipotle-Lime Chicken Thighs Jamaican Rice and Peas
1 cup sliced onion
1 cup chopped celery
1 cup chopped carrots
4 pounds skinless chicken thighs
Salt and freshly ground black pepper
1 (15-ounce) can tomato sauce
1/4 cup lime juice
1 tablespoon minced chipotle chiles in adobo sauce with 1 teaspoon sauce from can
2 cloves garlic, minced
1 avocado, diced
1/4 cup chopped fresh cilantro leaves
Lime wedges, for garnish
Arrange onion, celery and carrots in bottom of slow cooker. Season chicken thighs with salt and pepper and arrange over vegetables.
In a medium bowl, whisk together tomato sauce, lime juice, chipotle chiles with sauce, and garlic. Pour mixture over chicken.
Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. Serve half of the thighs with this meal (topped with diced avocado and cilantro and garnished with lime wedges) and reserve remaining thighs for another meal.
Jamaican Rice and Peas:
2 cups instant white rice
1 (14-ounce) can coconut milk
1 cup water
1 (15-ounce) can red beans, drained
1 teaspoon dried thyme
1/2 teaspoon finely grated lime zest
1/4 cup chopped scallions
Salt and freshly ground black pepper
In a medium saucepan, combine rice, coconut milk, water, beans, thyme, and lime zest. Set pan over high heat and bring to a simmer. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorbed. Fold in scallions and season to taste with salt and pepper.

Jamaican Rice and Pea Recipe
1 cup kidney beans dry
陆 cup coconut milk
陆 tsp dried thyme leaves
录 cup crushed garlic
录 cup escallion chopped
陆 tsp scotch bonnet pepper diced
2录 cup white rice
录 tsp salt
Preparation
1. In a medium saucepan with a tight-fitting lid, place the washed beans.
2. Add the coconut milk and bring to boil.
3. Reduce the heat and cook until the beans are tender.
4. Add the thyme, garlic, escallion and salt.
5. Add the hot pepper if desired.
6. Simmer for a few minutes and add the rice.
7. Cover the pot and bring to a boil again.
8. Reduce the heat to low. Cook until parboiled.
Jamaican Chicken Recipe
录 cup vegetable oil
8 chicken thighs de-boned skin removed
录 cup onion, chopped
2 cloves garlic minced
录 tsp salt
录 tsp black pepper
1 tbsp. chicken sauce
录 tsp allspice
4 fresh basil leaves,
陆 tbsp crushed scotch bonnet pepper
Preparation
1. Heat oil in frying pan and add chicken and cook until browned.
2. Add onion and garlic and cook 2 minutes.
3. Add sweet chicken sauce, basil and pepper.
4. Heat to a boil.
5. Cover and cook over low heat until done.
YES! PUT CHICKEN RICE AND PEASE ON A PLATE. I CALL IT CHICKEN RICE AND PEAS.
JAMAICAN RICE AND PEAS
1 1/2 c. cooked red kidney beans, liquid reserved
2 cloves garlic, chopped
1 1/4 c. unsweetened coconut milk
Water (enough to make 2 1/4 c. combined liquid)
1 c. rice
2 green onions, crushed
1 or 2 sprigs fresh thyme
Salt to taste
Coarse black pepper to taste
Cook red kidney beans to package directions. Put cooked beans into a large saucepan or pot. Add chopped garlic. Measure all liquids, including reserved bean liquid, coconut milk and water enough to make 2 1/4 cups. Add the 2 1/4 cups of liquid to the beans and garlic in the pot. Add rice, crushed green onion, thyme, salt and pepper to taste. Bring to a boil. Reduce heat. Cover and cook for about 20 minutes or until all liquid is absorbed.
