No BBQ sauce... no sauce period... no bread crumb coatings either. I just want things like olive oil and dry seasonings...simple herb-ish and kinda rotisserie flavor.....something to make the skin a lil crispy too.

Place your chicken in a big bowl and add just a tablespoon or two of olive oil - just enough to lightly coat. Add a pinch of oregano, thyme, salt, black pepper, cayenne pepper, garlic powder and onion powder. Toss it all around with the chicken pieces to coat with the spices evenly. (if you can, let it sit in the spices and oil in the fridge for an hour or so, to let the flavor of the spices come out) Place the chicken pieces skin side up in a single layer in a roasting pan or baking dish. All I do is:
1.Take some tin foil and line a pan
2.Wash your chicken legs put them in the pan
3.Slice some whole unpeeled potatoes
4.put them in the pan around the chicken
5.Chop an onion put it in
6.Pour some olive oil on top
7.sprinkle some parley, oregano, salt and pepper on top
8.Cook at 350
This rub is really good:
2 tsp. salt; 1 tsp paprika; 1/2 tsp onion powder; 1/2 tsp thyme; 1 tsp black pepper; 1/4 to 1/2 tsp cayenne pepper; 1/2 tsp garlic powder.
It makes enough for a whole chicken, but you may have to double it if rubbing on pieces.
In our house we melt a stick of margarine in a 400 degree oven in a 13x9 inch pan. While that is melting in a paper sack (or a ziplock kind will do) put flour, salt %26amp; pepper. Mix and then add chicken legs and shake to coat. Put into the pan and sprinkle with paprika. Cook for about 45 minutes at 375 - 400 degrees. Turn once and cook for @ 15 more minutes. This will give you a crispy coat with out the deep frying. It is one of my children's favorites and so easy to make. You can do all the sides while the chicken is cooking!
lemon herb baked chicken
first take some evoo(extra virgin olive oil)and drizzle some over the arranged legs.Then take some lemon juice form the store and drizzle about two tablespoons(for about 15-20 legs) Then take some parsley fresh or flakes and sprinkle about 1/3 of a cup over them. Then, about a teaspoon of paprika, and eyeball the salt to taste. One half teaspoon of pepper. You will bake at 375 for hour, if you want them to be extra crispy bake full hour and ten Min's. no cover at 350.

Well, You could remove the skin for less fat on the legs or you could bake with the skin. Just line an oven pan with foil or Use a shallow foil aluminium pan and hand coat it with olive oil.Place the legs into pan and
Sprinkle with granulated garlic powder, granulated onion powder, salt and pepper. place the pan into a pre-heated oven of 350 degrees F. and bake for 3/4 hr.- 1hr. until crispy and golden. A sauce of your choice, it's optional, about ten minutes before removing from the oven. This is a simple method with a very good flavour.
