What is the most delicious recipe for creamy chicken and/or shrimp Alfredo pasta?

CHICKEN ALFREDO





1 pkg. fettucini noodles


8 oz. sour cream


2 c. half %26amp; half


1/2 c. Parmesan cheese


1/2 tsp. pepper


Butter


2 whole boneless chicken breasts


1 egg


1/2 c. milk


1 c. bread crumbs


Cooking oil


Flour





Cut chicken breasts into long, thin fingers. Cover with flour, dip in egg, then cover with bread crumbs. Fry in hot oil until done. Cook fettucini noodles as directed on package.


In large saucepan, heat half %26amp; half. Add sour cream. Make a rue with butter and flour. Add to half %26amp; half and sour cream. Cook until thickened. Add cheese and pepper to taste. Put chicken in sauce and serve over fettucini noodles.





LOW CALORIE CREAMY PASTA ALFREDO





1 1/2 c. 1% fat cottage cheese


2 cloves garlic, cut in half


1/2 c. skim milk


2 tbsp. flour


3 tsp. fresh lemon juice


1 tsp. leaf basil, crumbled


1/4 tsp. dry mustard


1/2 tsp. pepper


1/4 tsp. salt


1/2 lb. pasta of your choice


1 med. ripe tomato, cut in half, seeded %26amp; coarsely chopped





Place cottage cheese, garlic and skim milk in food processor. Process until there are no lumps. Add flour, lemon juice, basil, mustard, pepper and salt. Blend. Set aside in a medium size saucepan. Cook pasta according to directions and drain.


Place in large bowl. Heat ingredients in saucepan over a medium-low heat and allow to thicken slightly. Stir until sauce just begins to boil. Do not allow sauce to come to a full boil. 1 pound fettuccini pasta


1 tablespoon butter


1 pound cooked shrimp - peeled and deveined


4 cloves garlic, minced


1 cup half-and-half


6 tablespoons grated Parmesan cheese


1 tablespoon chopped fresh parsley


salt to taste








DIRECTIONS


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.


In a large skillet, saute shrimp and garlic in the butter for about one minute. Pour in half and half; stir. Sprinkle Parmesan cheese in one tablespoon at a time, stirring constantly. After all Parmesan is added, mix in parsley and salt. Stir frequently making sure it does not boil. Sauce will take a while to thicken.
