I've got 2:
1) Slice lemon and oranges thin and place between meat and skin of the chicken. Stuff cavity with remaining slices AND 1 onion and 1 rib celery, chopped. Salt and pepper and bake about 1 1/2 hours at 350. The gravy it makes is sooo good!
2)McCormicks makes a Rotisserie seasoning. Generously season chicken with that. Also put onion and celery in the cavity and bake for 350 for the same amount of time.

INGREDIENTS:
1 whole roasting chicken, 3-4 lbs.
1/4 cup of your favorite salad dressing
salt and pepper to taste
PREPARATION:
Rub the chicken with salad dressing, inside and out, and sprinkle with salt and pepper to taste. Put the whole chicken in a 4-5 quart crockpot, cover, and cook on low for 6-8 hours, until chicken is very tender. Serves 4-6Has anyone got a nice recipe for slow roasted whole chicken??
Stuff full of whole garlic cloves - Mmmmm!!
Put your oven on a low/medium heat.
If you want to flavour the chicken you can stick half a lemon and some garlic and herbs in the cavity, or rub spices or harissa into the skin.
Put the chicken in.
Leave it in till its cooked - the slower you want to cook it, the lower the heat and the longer the time. Its done when you can poke a skewer in at the joints and the juices run clear.
But why do you want to slow roast it rather than just roast it? You need a bit of heat to get the skin nice and crispy.
Rub it with butter, sage, rosemary and any other herb you like, spit it and turn it over coals for about an hour (depends on size etc.).
i put mine in the oven on gas mark 5 for 3 hours, coverd with foil. i put tarragon or garlic on it first, after 3 hours i uncover and turn up to 6 for 1-2 hours to crisp the skin.
not necessarily SLOW roasted = but
take 1 chicken - using kitchen scissors - cut out the backbone
and discard backbone
using a lemon pepper (or your choice) salt - shake on both sides
of chicken
place chicken on wire rack for grilling with pan underneath
bake 1 hour @ 350 degrees
succulent chicken ( and you can throw in a couple of baked potatoes for fun, too)
wash potatoes
pierce with fork
wrap in aluminum foil
(set butter out to warm)
place in oven before chicken (they do not have to be over pan)

nothing canned is very good. I'd use fresh, cubed, cooked chicken and frozen mixed vegetables... and add twice the amount of each that's called for. Otherwise, it's a pretty basic recipe......(maybe some fresh chopped herbs too - sage, thyme, oregano, rosemary, or whatever)
I'd replace canned chicken with fresh chicken, and it sounds pretty tasty.

CAn someone please give me an easy recipe to make my children chicken nuggets at home? My daughter loves them but I'm not convinced the ones from the supermarket have all the right stuff in!!!

I make mine different than all of these recipes. My actually taste like authentic southern fried chicken strips.
I buy about 3 lbs of boneless breast. I slice them into strips and marinade overnight just covered in buttermilk.
I then start out with fresh oil that has been heated (and is already up to temp of 350). My strips I drop in a ziploc bag of flour and Tony Cachere's creole seasoning(about 3 tbsp seasoning per cup of flour). I shake to coat then carefully place in the hot oil. I let them go until they float, kind of using tongs to turn them so they cook evenly. Lightly salt them right when they come out of the oil and rest on paper towel.

When completely coated place on cookie sheet and bake at 350 degrees for 15-20 minutes until golden. Serve with a dipping sauce and toothpicks or use as a main dish. Delicious!

Real easy way is get Oven Fry it will be near the shake-bake stuff. Buy the chicken tenderloins instead of the whole breast these make it much easier for handling. Follow the directions on the Oven Fry box, which is simple, dip in egg and then Oven Fry and then put on a pan to bake. All done and they are very good, my daughter eats them all the time and she is very picky.
I use stale bread, leave it out for a few hours, which I breadcrumb, then I add seasoning My kids love cumin. Then I crack an egg, and get out a bowl of flour. I get the chicken roll it in the flour first then the egg, then the breadcrumbs and keep repeating the breadcrumbs and egg until its coated, then I gently fry in olive oil for a min, so the breadrumbs are golden and then put in the oven for 20 mins or so. I usually do 30 at a time and freeze some down. If your doing chips with it heres a great low fat recipie. cut up potatoes into chip shape leaving the skins on. gently boil them for 5 mins. Lightly grease a tray with low fat salt free butter and again add seasoning, I use all sorts depending on what they are going with, rosemary works well and also bbq or chilli powder. Give the chips a good shake up and put in the oven for 30 mins. They are delicious and even nice cold. i never use salt and my kids love these dishes

She boils 4 small hens / chickens
once they are done boiling she cuts green onion, white onion and cajun seasonings
then she shreds the chickens by hand, into small pieces
she then mix Blue Plate Mayonnaise with the onions and seasonings
she adds the chicken with salt pepper and a little bit of cayenne pepper.
she then refrigerates the chicken salad over night .
she said it tastes much better, because the ingredients expel when refrigerated.
I eat it with ritz crackers, best chicken salad ever!Crazy for Chicken Salad. What's your family recipe?

Here is my favorite recipe. I use it at the Ranch house for a quick sandwich.
*********CHEDDAR CHICKEN SALAD SANDWICH
2 c. chopped, cooked chicken
1/2 c. Miracle Whip salad dressing
1/2 c. chopped, pitted ripe olives
1/2 c. (2 oz.) shredded sharp natural Cheddar cheese
1/4 c. chopped green pepper
1/4 c. chopped onion
6 croissants, split
Lettuce
Combine chicken, salad dressing, olives, cheese, green pepper and onion; mix lightly. Chill. Fill croissants with lettuce and chicken mixture. 6 sandwiches. Excellent for a hot day!
celvery mayo oion chicken salad
I dice my cooked chicken, add cooked and cooled cheese tortellini, and pour bottled Italian dressing (fat free works best for this recipe, as it doesn't separate) over it. Sometimes I add a little Parmesan cheese, too. Chill a couple of hours so the flavors have a chance to blend a little, then serve.
I like grapes halved and almond slivers. I usually mix up my veggies with this one. Sometimes celery, onion, whatever! I also occasionally like water chestnuts in there.
Hellman's mayo, you're my hero! try adding green grapes and we like less mayo and a little sour cream
no one in my family likes mayo or miracle whip, so here is our chicken salad recipe, from 1945.
4 cups of cooked (boiled) chicken
1/2 cup of sour cream
2 cups of chopped celery
2 tsp of finely diced onion
1/2 package of softened cream cheese
1 cup finely diced mushrooms any variety you like
salt and pepper to taste
we make sandwiches out of it, or serve it on home made crackers. ENJOY

And as for the above folks and their YUCK. and the Licorice flavor...well the bitter part is from the seeds(also known as Anise)

I wouldn't suggest it. The flavors are all to different. Fennel has a much heavier flavor. It takes away from the chicken.
