so, the chicken is all ready cooked? what kind of veggies?

listen, this is easy, you should know this all ready.

take some olive oil, just a tablespoon or so and put it into a large frying pan or skillet. turn to medium heat. wait five minutes.

have your veggies cut into bite size pieces, make sure you have at least an onion.

the most important ingredient is garlic. If you don't have this, well it won't be as good, but you can still make the dish.

Basically saute the garlic and veggies together over a medium heat until they are tender. then throw in the chicken(chopped up) to heat that up to temp.

then pour over the rice and add salt and pepper to season.Need easy recipe. Have cooked boneless/skinless chicken breast. What can I make that is healthy/low fat %26amp;?
Fish is always good and healthy. I love to bake salmon. Also try turkey wings in the oven or the crock pot.
fillet your breasts in half, and pound thin. Put raw fresh veggies inside and roll the breast around the veggies (it's ok to have some hanging out the side. Place seam side down on a baking dish, coat with olive oil and sprinkle with whatever spices you like. Bake for 30 minutes or until chicken is done. It's fabulous with goat cheese, portobello mushroom slices and spinach!

Edit: sorry, I ignored the cooked chicken breast part! Make Fried rice. Use non stick spray instead of oil and any/all veggies you have. My kids love it. You can also make shredded chicken tacos with avocado slices, lime juice, and pico de gallo instead of cheese and sour cream.
Chicken %26amp; Asparagus Bundles

4 boneless skinless chicken breast halves (1 pound)

*20 fresh asparagus spears (about 1 pound), trimmed

4-1/2 teaspoons olive oil

2 teaspoons lemon juice

1/2 teaspoon dried basil

1/4 teaspoon dried thyme

1/4 teaspoon pepper

1/8 teaspoon salt

1/4 cup chopped green onions

2 teaspoons cornstarch

1 cup fat free chicken broth

Flatten chicken breasts slightly. Wrap each around *5 asparagus spears; secure with toothpick. Place in a 13-in.by 9 by 2 in. baking dish coated with nonstick spray.

Combine the oil, lemon juice and seasonings; pour over bundles. Cover asparagus tips with foil. Cover and bake at 350 degrees for 15 min. Uncover and sprinkle with onions. Bake 12 - 15 min. longer or until the chicken juices are clear and the asparagus is crisp tender. Remove bundles to a serving platter and keep warm.

In a saucepan, combine cornstarch and broth until smooth; stir in pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove toothpicks from bundles; top with sauce.

*I only use 2 asparagus spears per bundle. You could serve with the rice, %26amp; cherry (or sliced) tomatoes on the side.

Edit: Just noticed the chicken breasts are already cooked. I would make a chicken caesar salad:

Or Chicken Salad Nicoise:

sounds like a chicken/veggie stir fry. since your chicken is already cooked, stir fry chopped veggies in a small amount of canola oil and teriyaki sauce. Add some garlic for flavor. Add the chopped chicken at the end, as all you have to do is warm it

Good luck.
Make a big entree salad - Just combine all your fresh veggies and add the diced chicken to the top. If you have any nuts or seeds - add a small handful of them too. Toss with your favorite light dressing and you have a healthy, delicious meal.
Toss the chopped chicken and veggies with romaine salad. Very filling and healthy.
