recipe #1:


COLD PASTA AND CHICKEN SALAD OR SHRIMP


SALAD





8 oz. vermicelli pasta noodles


1 c. French dressing


10 fresh sliced mushrooms


1 c. fresh broccoli florets, blanched


10 slices cherry tomatoes


Ripe olives (sliced)


1 can sliced artichoke hearts


2 c. cooked cubed chicken (or boiled shrimp)


1/3 c. fresh basil (or 1 1/2 teaspoon dried)


1/3 c. toasted pine nuts, optional





Cook pasta, transfer to mixing bowl. Add 1/3 of the dressing and toss well. Cool and chill 3 hours. In another bowl, mix mushrooms, broccoli, tomatoes, olives, artichokes with remaining dressing. Chill. Add chicken, basil, nuts. Mix with pasta.

COLD PASTA SALAD





1 lb. pasta, cooked %26amp; drained


1 cup Italian salad dressing or vinaigrette


1 tablespoon Salad Supreme seasoning


3 tomatoes, chopped


2 cucumbers, chopped


1 1/2 red onions, chopped


2 green peppers, chopped





Combine all above ingredients into a very large bowl and marinate overnight. Put a lid over your bowl. Serve cold.

COLD CHICKEN PASTA SALAD





1/2 pkg. 8 oz. rotelle pasta


3 c. cubed cooked chicken


1 c. diced zucchini


3/4 c. diced celery


1/2 c. mayonnaise


1/8 tsp. pepper


2 tbsp. dried basil


3 tbsp. chopped fresh parsley (optional)


1 c. diced tomatoes


3/4 c. sour cream


1 tsp. salt


2 tsp. lemon juice


1 tsp. dried oregano





Cook pasta according to package directions; drain. Rinse with cold water and drain well. Add chicken, zucchini, tomatoes and celery. Place remaining ingredients in blender or food processor and blend until well mixed. Chill the dressing 1 hour before adding to salad. Toss salad, coating well. i got this recipe from a websight.. i guess they mean that you should use 4 oz but i guess it depends on how many people you plan to serve Report Abuse

Your favorite chicken salad (or tuna salad or pasta salads even from the deli) piled into a red ripe tomato.


Cut tomato into 6 or 8 sections almost to the bottom, spreading out the sections to form a cup shape.


Salt and pepper lightly.


Shred lettuce onto a plate, place tomato on lettuce, pile chicken salad into tomato.


Serve with a variety of crackers or breadsticks. Sun Chips are best.


Go-withs: sliced pickled beets, pickled okra, dill or Polish pickle spears, pickled baby corn.

INGREDIENTS


1/2 cup olive oil


1/2 cup red wine vinegar


1 1/2 teaspoons garlic powder


1 1/2 teaspoons dried basil


1 1/2 teaspoons dried oregano


3/4 teaspoon ground black pepper


3/4 teaspoon white sugar


2 1/2 cups cooked elbow macaroni


3 cups fresh sliced mushrooms


15 cherry tomatoes, halved


1 cup sliced red bell peppers


3/4 cup crumbled feta cheese


1/2 cup chopped green onions


1 (4 ounce) can whole black olives


3/4 cup sliced pepperoni sausage, cut into strips


DIRECTIONS


In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight

you can add other stuff like onions, or ham cubes, mushrooms, whatever.





just cook the pasta, rinse in cold water, drain and add the other stuff and stir. thats it
there are some easy salad recipes on this link, i like the italian chicken salad.

I make a roasted/grilled veggie and orzo salad. basically just throw veggies--whatever you like--I usually use summer squash, zucchini, peppers and a red onion--drizzled olive oil, salt %26amp; pepper on the grill (4-5 min each side). Cook the orzo (little rice shaped pasta) then let it cool-I'm impatient so I usually run it under cold water!





Then mix....I usually use whatever vinagertte I have laying around the house as a dressing..
Best Pasta Salad Recipe:





16 oz box of spiral pasta


1 cucumber - diced


1 carton of grape tomatoes - halved


1 c. parmesan cheese


16 oz bottle of Zesty Italian Dressing


1 bottle of Salad Seasoning (located in the spice isle)


1/2 onion - diced





Cook pasta as directed, then drain. Rinse under cold water until pasta is cold. Combine pasta with the rest of the ingredients. Chill for 4-6 hours. May need to add a little more Italian Dressing after chilling.
Italian Pasta Salad





1 lb. either spiral or tri-colored rotini (cooked and cooled)


1/2-1 English (seedless) cucumber cut in 1/4'; chunks


12-15 cherry tomatoes - cut in half


1/2 green bell pepper cut in 1/4'; size pieces


1/2 red bell pepper cut in 1/4'; size pieces


1/2 yellow red bell pepper cut in 1/4'; size pieces


1/2 red onion cut in 1/4'; size pieces


1/2 cup of shredded carrots


1-2 ribs of celery cut in 1/4'; pieces


1 can of chick peas (garbanzo beans) rinsed


1/2 - 1 cup Italian dressing


salt and pepper to season to your taste





Optional: Feta cheese crumbled up on the side - do not mix in pasta - gets funky after sitting with the other ingredients overnight. Also you could add black olives if you prefer.





Mix all together and chill 1-2 hours before serving. Then put the feta cheese on the side for those who want to add it or not.
