Whats a good recipe for chicken parmesan?

i want a good recipe for chicken parmesan but i dont want to have to pan fry my chicken before i bake it....i used a really good recipe before but i cant find it anymore it called for easy and simpe ingredients and all you had to was bake the chicken i dont like a whole lot of spaghetti sauce so i want recipes where i don t have to bake the chicken with the spaghetti sauce either sorry i know im being pickyWhats a good recipe for chicken parmesan?
I like this one. With this one you bake the chicken, then serve with the tomato sauce.





* 1/2 cup flour


* 2 eggs


* 1 cup fine breadcrumbs


* 1/2 cups grated Parmesan cheese


* 3 tbsp dried oregano


* Salt and pepper to taste


* 3 boneless, skinless chicken breasts





Preheat your oven to 375 degrees. Set up a standard breading station by pouring the flour into one bowl, the eggs into a second and the breadcrumbs, Parmesan, oregano, salt and pepper into a third. (To keep your hands from becoming breaded use one to handle the chicken while it is dry and the other hand while it is wet.)





Dredge the chicken breasts in the flour first then shake off any excess before adding to the egg. Coat well with the egg, drain well then toss into the breadcrumbs. Coat well then place in a lightly oiled baking dish. Bake until the chicken is golden on the outside and cooked through, about 25 minutes.





Serve with Speedy Tomato Sauce or your favourite tomato sauce.





Speedy Tomato Sauce





* 1/4 cup extra virgin olive oil


* 2 onions, peeled and diced


* 6 garlic cloves, minced


* 1 can (28 ounce) whole tomatoes


* Salt and pepper


* 1 bay leaf


* 1 tsp dried thyme, basil or oregano





Heat a saucepan over medium-high heat and add the oil and onions. Saut茅 them just until they start to lightly brown. Add the garlic and continue to saut茅 for a few more minutes.


Puree the tomatoes and juice and add to the pan. Season with salt, pepper, bay leaf and your choice of dried herb and stir well to combine. Simmer for 10 minutes.Whats a good recipe for chicken parmesan?
Chicken Parmesan: My old boss's recipe and he is Italian. Take a boneless skinless chicken breast and pound thin between two pieces of heavy plastic. Melt some butter with a little good quality olive oil. When cool add some Dijon mustard, a dash of Worchestershire sauce a little salt and pepper. You need bread crumbe mixed about 1/2 and 1/2 with Parmesan cheese. I like fresh bread crumbs. Dip the chicken into the butter mixture and then the bread crumbs. You roll up the breasts and place then in a lightly oiled baking pan. And cover with plastic wrapo and then with foil. Bake for 1/2 and hour and then uncover for another 30 minutes. The plastic wrap doesn't melt and it keeps the meat really moist. This isn't traditionally served with a tomato sauce and it is very rich. So it goes well with a green salad with an acidic salad dressing.



Ingredients





* 4 boneless, skinless chicken breast halves


* 1 1/2 cups plain bread crumbs


* 1/2 cup grated parmesan


* 1 tablespoon dried oregano


* 1 tablespoon dried basil


* 1/2 teaspoon cayenne


* 1/2 cup flour, on a shallow plate


* 2 eggs, lightly beaten, in a pie plate


* 3 tablespoons olive oil


* 2 cups prepared tomato sauce


* 1 1/2 cups grated mozzarella





Directions





Place chicken breasts between two pieces of plastic wrap and pound out to 1/2'; thickness using a mallet or rolling pin. Combine bread crumbs, 1/4 cup parmesan, oregano, basil and cayenne in a pie plate. Coat each breast in the flour, shaking off any excess flour. Dip each breast in the egg and then into the bread crumb mixture. Set coated chicken aside on a plate. Heat oil in a large non-stick skillet. Carefully add chicken to pan, cooking two pieces at a time. Cook until golden on both sides. Spread one cup of the tomato sauce in the bottom of a baking dish and top with golden chicken breasts. Top each breast with the remaining sauce and sprinkle with mozzarella and parmesan cheeses. Bake in a 375 degree oven for 20 minutes or until cheese is bubbly. Serve hot with spaghetti and tomato sauce
