Chicken Fajitas





1/2 cup fresh lime juice


1tablespoon each: chopped garlic and black pepper


6tablespoons olive oil


4tablespoons chopped cilantro


Salt and pepper to taste


2pounds boneless, skinless chicken breasts





Combine lime juice, garlic, pepper, oil, cilantro, salt and pepper. Marinate


chicken covered in refrigerator 1 hour or as long as overnight. Grill on


barbecue grill (over mesquite if desired) until done. Cut in bite-size


strips. Place on warm flour tortillas and add desired toppings -- shredded


lettuce, tomato, salsa, pico de gallo, guacamole and/or sour cream. Makes 4


to 6 servings.











Easy Chicken Fajitas





1 lb. Chicken breast strips


1 cup Salsa


2 tablespoons lime juice


1 teaspoon Worcestershire sauce


1 bell pepper, cut into thin strips


1 onion, cut into thin strips


1 (12-ct.) pkg Flour Tortillas





1. Brown chicken over medium-high heat until no longer pink. Stir in


salsa, lime juice and Worcestershire sauce.





2. Add pepper and onion; cook and stir 3 to 4 minutes until vegetables


are tender-crisp.





3. Spoon fajita filling onto tortillas. Top with additional salsa if


desired. Roll up to serve.











Chicken Fajitas





8 medium fat-free flour tortillas


= (regular or whole wheat)


2 teaspoons olive oil


1 pound marinated chicken breast strips


1 pound frozen peppers and onions


= (or other frozen fajita vegetables)


1/2 cup fat-free sour cream


1/2 cup salsa





Preheat oven to 300 degrees.





Wrap tortillas in foil. Bake until warm, about 10 minutes.





Meanwhile, heat oil in a large skillet over medium-high heat. Add


chicken and saut茅 until cooked through, stirring frequently, about 3


to 5 minutes. Transfer chicken to a serving plate, cover with foil


and transfer to oven to keep warm.





In same skillet over medium-high heat, saut茅 frozen vegetables until


tender-crisp, about 3 minutes. Serve chicken and vegetables with


warm tortillas, sour cream and salsa.





This recipe yields 4 servings; about 2 tortillas, 3 ounces chicken,


1/2 cup vegetables and 2 tablespoons each sour cream and salsa per

You'll have to debone your chicken and then saute or fry cook it with your other Fajita fixings, or if your just going to ';pick'; it off the bones then bake it at 350 for about an hour with a good rubbing of this Mix





Fajita Seasoning





Ingredients:


1 tablespoon cornstarch


2 teaspoons chili powder


1 teaspoon salt


1 teaspoon paprika


1 teaspoon sugar


3/4 teaspoon crushed chicken bouillon cubes


1/2 teaspoon onion powder


1/4 teaspoon garlic powder


1/4 teaspoon cayenne pepper


1/4 teaspoon cumin





Combine all ingredients in a small bowl.


Use as needed in recipes calling for fajita seasoning.

Chicken Fajitas


A great Mexican-style treat that's easy to make at home.





4 pieces boneless, skinless chicken bone, cut in strips


1/3 cup lime juice


1/2 teaspoon salt


2 teaspoons Gravy Master


1/4 teaspoon chili powder


1 cup salsa


1/2 cup thinly sliced onion


4 flour tortillas


1 cup chopped onion


1 cup chopped tomato


1/2 cup sour cream


1/2 cup guacamole


Chopped fresh coriander (cilantro) or parsley





Directions:





Place chicken strips in shallow baking dish. Combine lime juice, garlic powder, salt, Gravy Master and chili powder. Pour over chicken and marinate 30 minutes. Drain.





Cover and cook on HIGH 3 minutes, stirring once. Stir in salsa and onion. Cover and cook on HIGH 3 minutes more.





Wrap tortillas in paper towels. Microwave on HIGH 1 minute.





Spoon chicken mixture down center of tortillas. Top with tomatoes, sour cream and guacamole. Sprinkle with coriander or parsley. Fold tortillas to close. Makes 4 servings.
