Chicken and peanut butter? (African recipe)?

I used to have a roommate from west africa. He would make a dish using peanut butter and peices of chicken. But it was so long ago i cant remember the details. Does and one have a recipe??Chicken and peanut butter? (African recipe)?
could it be one of these?





PEANUT BUTTER CHICKEN OVER RICE


(AFRICAN ORIGIN)





Fried chicken, approximately 1/2 cut in pieces


1 1/2 tbsp. peanut butter


1/2 sm. onion, diced


1 sm. tomato, diced


1 tbsp. butter


1 tbsp. oil


2 c. rice, cooked


1 c. hot water





Melt butter and oil into saucepan. Saute onion and tomato until soft and 1/2 tablespoon of peanut butter in saucepan. Add hot water and bring to a boil, stirring constantly. Lower heat to a simmer, add chicken and continue to simmer 6 minutes. Cover and serve over cooked rice.








AFRICAN CHICKEN





4 lb. chicken pieces


1/4 c. vegetable oil


1 tsp. salt


1 tsp. curry powder


1 lg. onion, peeled and sliced


1 lg. sweet red pepper, cut in strips


1 lg. onion


1 lg. sweet red pepper


1 lg. tomato


1 1/2 c. uncooked rice


1/4 c. crunchy peanut butter


1/4 c. warm water





Brown chicken in vegetable oil in large frying pan. Set aside. Remove all but 2 tablespoons of oil and drippings in pan. Stir in curry powder and salt. stir in onion, red pepper, and tomato. Cover and simmer 5 minutes. Return chicken to pan. Cover. Simmer until chicken is tender. Remove chicken to large platter. Blend peanut butter and water. Stir in vegetables. Heat to boiling. Spoon over chicken. Peanuts are common in the African cuisine.Chicken and peanut butter? (African recipe)?
I saw something similar, well a few peanut African recipes anyway on www.cookeryclub.co.uk, they have an African section.
Oriental cooking also uses peanuts and peanut sauces in chicken dishes. Don't have details for you but will get back here if I can find a recipe.
Ghanaians make groundnut soup which they serve with rice, and or meat (usually chicken). Try using the term ';ground nut'; in your search.
