It is SUPER easy, and SUPER delicious! They turn out super crispy...And the coconut makes them all sweet and delicious! They are always a hit at my house, and then kids I babysit and cook these for love them, too!

Seasoned flour, egg wash and breadcrumbs. Shallow fry in vegetable or sunflower oil for a couple of minutes. Serve with salad, chips and BBQ sauce. Miss out the salad if you feel like being completely unhealthy!! xx

Recipe for chicken chettinad...?
Recipe 1:
Chettinad Chicken
Ingredients
* 1 kg: Chicken
* 1 1/2 cup: Onion
* 1 cup: Tomato
* 20 cloves: Garlic
* 1 big piece: Ginger
* 2 tsp: Pepper
* 2 tsp: Cumin seeds
* 2 tsp: Fennel (Jeera)
* 录 cup: Coriander Powder
* 陆 small cup: Chilli Powder
* Cloves (lavangam) as required
* Tamarind as required
* Salt to taste
* 5 tsp: Oil
Method
1. Wash the chicken and cut to pieces.
2. Mince garlic and ginger.
3. Powder pepper, cumin seeds and fennel together.
4. Fry the powders lightly and keep aside.
5. Season cloves in oil in a frying pan, add onion and tomato.
6. Saut茅 well adding minced garlic and ginger.
7. Add chicken with little turmeric powder and cook for 10 minutes.
8. Add chilli /coriander powders, salt and mix well.
9. Pour 4 cups of water and boil.
10. When chicken is half boiled, add the half fried pepper, cumin seed and fennel powder and mix well.
11. When the gravy thickens to a paste, remove from fire.
12. Serve hot.

* 1 kg chicken (you can use a whole chicken cut into bits or leg or breast pieces)
* 2 large onions sliced fine
* 2 tomatoes chopped fine
* 2 tsps ginger paste
* 2 tsps garlic paste
* 10-15 curry leaves
* 1 tsp chilli powder (optional)
* 1 star anise
* 2 tsps lime juice
* Salt to taste
* 1 tbsp poppy seeds
* 1 tsp coriander seeds
* 1 tsp cumin seeds
* 1 tsp aniseed/fennel seeds
* 3 dry red chillies
* 1'; piece of cinnamon
* 2 cardamom pods
* 3 cloves
* 1/2 cup grated coconut
* 2-3 tbsps vegetable/sunflower/canola oil or ghee
* Chopped coriander leaves to garnish
PREPARATION:
* Heat a heavy pan or skillet on a medium flame and roast the poppy, coriander, cumin and fennel seeds, dry red chillies, cinnamon, cardamom, cloves and coconut for 3-4 minutes. Remove from flame and allow to cool. Grind the mixture into a coarse powder in a clean, dry coffee grinder.
* Mix the ginger and garlic pastes with this powder and keep aside.
* In another deep pan, heat the oil and add the curry leaves. When they stop spluttering, add the sliced onions and fry till they are light brown.
* Add the spice paste and star anise and fry for another 2-3 minutes.
* Add the tomatoes and chilli powder and stir well to mix all the ingredients.
* Add the chicken, cover and simmer till it is tender.
* When the chicken is done add lime juice, mix well and turn off the flame.
* Garnish with coriander leaves and serve.

Cloves (lavangam) as required
Pepper - 2 small spoons
Tamarind as required
Cumin seeds - 2 spoons
Salt to taste.
Preperation :
Wash the chicken and cut to pieces. Roast lightly powdered pepper, cumin seeds and sombu and keep it aside. Heat the oil with lavangam in the frying pan or kadai, and then add onion and tomato. Add minced garlic and ginger. Add chicken pieces, little turmeric powder and cook for 10 minutes. Add chilli and coriander powders, salt and mix well. Add 4 cups of water to the pan. When chicken is half cooked add the above roasted spice powder and mix well. When the curry is cooked to form a thick gravy, Chicken Chettinadu is ready to be served.

Roast the coconut, dry red chilli pcs,coriander seeds, whole spices and curry leaves till aromatic.
Then add the onions and fry till brown.
Add the ginger and garlic and fry for 5 mins more till the raw smell is gone.
Add soaked tamarind pulp, chicken, salt and coriander powder.
Add 1/2 water if you need a thick gravy.
Cook open for 10 mins.
Cover and cook till chicken is done.
Garnish with fresh cilantro or coriander leaves.

Start with 6 chicken breasts. Spray all 6 breasts with canola oil. Sprinkle 2 with a Cajun spice blend. Sprinkle 2 with a Jerk spice blend. Sprinkle the final 2 with a blend of chili powder, paprika and cumin. Respray all breasts with canola oil again to hold in the spice.
Fire up your grill to the maximum level and heat it up. Oil the grill surface so it doesn't stick to the meat. Put the breasts on the front of the grill, spice-side down. Now turn the front 2 burners off and leave on only the back burners, on low heat. This does a slow cook to the breasts.
Spice the top side of the breasts, oil them, and let them cook for 1 1/2 to 2 hours. They will be REALLY juicy and flavorful. Figure out which spice combination appeals to you most, and use the chicken in a variety of recipes!

soak the chicken in a very salty salt water for about a half hour.
Make up some highly seasoned flour,( garlic, red pepper, a chicken stock cube crushed, black pepper, onion powder, sage, a bit of Italian seasoning.) Use what ever you like.
after the chicken has brined for a bit. pat it dry with a paper towel, salt and pepper the chicken well or other seasonings, then flour it well. I stick it in a paper bag and shake it real good.
In a big skillet cast iron if you have, melt shortening or heat oil, until when you put a few sprinkles of flour in it it sizzles.. add chicken 1 piece at a time. On medium heat fry til brown on on side, turn over, turn down heat, and cook other side till crispy.. You can either cover and simmer til done. or take it out, put it on a rack and continue cooking on oven for about 15 minutes. oven makes it crispier.. covering makes it a softer coating.

Country Pan-Fried Chicken
3 pounds chicken breasts and legs
1 egg
2/3 cup buttermilk
2 cups flour
Salt, to taste
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 cup lard
1 cup solid white vegetable shortening
Let chicken warm to room temperature. Wipe with a damp cloth. In a wide bowl, beat egg with buttermilk.
Place flour, salt and peppers in a brown paper bag. In a large skillet (preferably cast iron) heat lard and shortening. Dip each piece of chicken into the buttermilk-egg mixture and place in a brown paper bag. Close top of bag and shake until piece is well coated. Remove, and repeat for each piece.
When shortening is hot (375 degrees F on a deep-fat thermometer), ease chicken into pan and cook over high heat, turning so both sides cook evenly. Do not crowd more than a few pieces of chicken into pan at one time. When chicken is light gold on both sides, turn down heat to low and partially cover skillet. Cook 15 minutes, turning chicken once.
Remove chicken and drain on brown paper bags. Serve warm or cold. Serves 6.
NOTE: You may use all shortening instead of lard.

Soak (overnight) your chicken pieces in buttermilk, in a covered bowl.
When ready to fry: Mix in a large bowl...flour, tons and tons of black pepper, a little old bay seasoning and a little cayenne pepper. I can't say for sure how much of each but let's say you have one cup of flour you would probably be using 2 to 3 tablespoons of pepper and a teaspoon of old bay and about 1/2 a teaspoon of cayenne pepper.
Mix the flour and seasoning well. Take a piece of chicken out of the buttermilk and press around in the flour until well coated. If you like extra coating (which I so love), dip again in the milk and then in the flour again. Place on a plate or platter and continue with the rest of the chicken. Put in the fridge for about 15-20 min.
In a large and tall pot melt crisco shortening (whole can if the pot is bit enough) and one stick of butter. You want the temp. to be between 325/350 degrees. Once reached put a few pieces of chicken in (do not over crowd the pot). Fry until golden brown turning ONLY one time

4 chicken cutlets, sliced thin
1 c. Italian bread crumbs (preferably Progresso)

(This is why I always where my ';kiss the chef'; apron around the house) Now that you've beaten the eggs to within an inch of their life, pour in the wine coolers (with a flavor to your liking) and watch the paste come to life! The whole solution should be a sapphire colour and should smell something like a new york septic tank (but the ritz crackers are about to change that) Take an ENTIRE box of ritz butter crackers and pour them into the basket. Take pan out of the oven, and cover lightly with foil and let chicken rest about 8 -10 minutes before serving.
This is a really simple recipe, and tastes fantastic! I have made chicken like this for years and my family loves it!

after the chicken has brined for a bit. pat it dry with a paper towel, salt and pepper the chicken well or other seasonings, then flour it well. I stick it in a paper bag and shake it real good.
In a big skillet cast iron if you have, melt shortening or heat oil, until when you put a few sprinkles of flour in it it sizzles.. add chicken 1 piece at a time. On medium heat fry til brown on on side, turn over, turn down heat, and cook other side till crispy.. You can either cover and simmer til done. or take it out, put it on a rack and continue cooking on oven for about 15 minutes. oven makes it crispier.. covering makes it a softer coating.

Country Pan-Fried Chicken
3 pounds chicken breasts and legs
1 egg
2/3 cup buttermilk
2 cups flour
Salt, to taste
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 cup lard
1 cup solid white vegetable shortening
Let chicken warm to room temperature. Wipe with a damp cloth. In a wide bowl, beat egg with buttermilk.
Place flour, salt and peppers in a brown paper bag. In a large skillet (preferably cast iron) heat lard and shortening. Dip each piece of chicken into the buttermilk-egg mixture and place in a brown paper bag. Close top of bag and shake until piece is well coated. Remove, and repeat for each piece.
When shortening is hot (375 degrees F on a deep-fat thermometer), ease chicken into pan and cook over high heat, turning so both sides cook evenly. Do not crowd more than a few pieces of chicken into pan at one time. When chicken is light gold on both sides, turn down heat to low and partially cover skillet. Cook 15 minutes, turning chicken once.
Remove chicken and drain on brown paper bags. Serve warm or cold. Serves 6.
NOTE: You may use all shortening instead of lard.

Soak (overnight) your chicken pieces in buttermilk, in a covered bowl.
When ready to fry: Mix in a large bowl...flour, tons and tons of black pepper, a little old bay seasoning and a little cayenne pepper. I can't say for sure how much of each but let's say you have one cup of flour you would probably be using 2 to 3 tablespoons of pepper and a teaspoon of old bay and about 1/2 a teaspoon of cayenne pepper.
Mix the flour and seasoning well. Take a piece of chicken out of the buttermilk and press around in the flour until well coated. If you like extra coating (which I so love), dip again in the milk and then in the flour again. Place on a plate or platter and continue with the rest of the chicken. Put in the fridge for about 15-20 min.
In a large and tall pot melt crisco shortening (whole can if the pot is bit enough) and one stick of butter. You want the temp. to be between 325/350 degrees. Once reached put a few pieces of chicken in (do not over crowd the pot). Fry until golden brown turning ONLY one time
