Really good recipe for chicken pot pie?

i had it like 2 weeks ago for the first time and i loved it


my sister wasnt fond of it but i think its absolutely delicious


anyone got a VERY GOOD recipe?!?!?!Really good recipe for chicken pot pie?

Old Fashion Chicken Pot Pie





2 cups all-purpose flour


1 teaspoon salt


3/4 cup lard


6 tablespoons cold water





1/2 cup butter


1/2 cup all-purpose flour


1 teaspoon salt


black pepper to taste


2 tablespoons finely chopped onion


3 cups chicken broth


1 1/2 cups sliced mushrooms


3 tablespoons butter


3 cups cooked chicken, chopped


2 carrot, finely chopped


2 stalks celery, finely chopped


2 potatoes, peeled and cubed





In a large bowl, combine 2 cups flour and 1 teaspoon salt. Cut in lard until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 4 hours or overnight. Roll one ball out to fit a 9 inch pie plate. Place bottom crust in pie plate. Roll out top crust and set aside.


Preheat oven to 400 degrees F (200 degrees C.)


In a large saucepan, melt 1/2 cup butter. Blend in flour, salt, pepper and onion. Gradually stir in chicken broth. Cook, stirring constantly until smooth and thickened. In a separate pan, saute mushrooms in 3 tablespoons of butter, then stir into saucepan. Stir in chicken, carrot, celery and potatoes. Mix well and pour into bottom pie crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.


Bake in the preheated oven for 30 minutes, or until pastry is golden brown, and filling is bubbly.

Ingredients


1 cup potato, diced


1 cup onion, diced


1 cup celery, diced


1 cup carrot, diced


1/3 cup melted margarine


1/2 cup all-purpose flour


2 cups chicken broth


1 cup half-and-half


1 teaspoon salt


1/4 teaspoon pepper


4 cups chicken, cooked and chopped


2 pie crusts (either store bought or your own recipe)





Directions


1. Preheat oven to 400掳F.


2. Saute onion, celery, carrots and potatoes in butter for 10 minutes.


3. Add flour to sauteed mixture, stirring well Cook one minute stirring constantly.


4. Combine broth and half and half.


5. Gradually stir into vegetable mixture.


6. Cook over medium heat stirring constantly until thickened and bubbly.


7. Stir in salt and pepper; add chicken and stir well.


8. Pour into shallow 2 quart casserole dish and top with pie shells.


9. Cut slits to allow steam to escape.


10. Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.
Impossible Chicken Pot Pie





2 c. cut up cooked chicken


1-1/2 c. frozen peas and carrots, thawed and drained


1/4 c. chopped mushrooms


1/4 c. chopped onion


4 eggs


1 1/3 c. milk


3/4 c Bisquick baking mix


1/2 tsp. salt


1/4 tsp. pepper





Heat oven to 400 degrees. Grease a 10 inch pie plate. Mix chicken, peas and carrots, mushrooms and onion in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 30 to 35 minutes. Cool 5 minutes. 6 to 8 servings.
