Here you go. This is a fairly common Thai dish. Sometimes I substitute bread crumbs for crushed pretzels and it's yummy (if you do this don't use as much salt!
PEANUT BUTTER CHICKEN
1 egg, slightly beaten
1/3 c. Skippy creamy or chunk style peanut butter
1 tsp. salt
1/8 tsp. pepper
1/3 c. milk
8 chicken drum sticks or 4 chicken breasts, sliced into tenders
1 c. fine dry bread crumbs
1/4 c.vegtable oil
Mix together egg, peanut butter, salt and pepper. Gradually add milk, beating with a fork to blend. Dip chicken in egg mixture; then add in crumbs. Place in oiled 13 x 9 x 2 inch baking pan. Sprinkle remaining corn oil over chicken pieces. Bake in 375 degree oven for 45 minutes or until chicken is tender.Need recipe. Chicken with Peanut butter sauce!?
I probably don't have the recipe, but the dish sounds delicious. What I can offer you is the recipe I use to make a nice tasty and thick peanut sauce. I usually make it to serve with summer rolls, but you could use it with just about anything. As far as how to make the chicken, I can think of many options, but you know best how the dish is that you're trying to recreate. This is a bit spicy as it's written. If you don't like spicy, then you may want to tone down the spice a bit. Enjoy!
PEANUT SAUCE - Cook onion, garlic, and red pepper flakes in oil in a small heavy saucepan over moderate heat, stirring, until pale golden, about 4 minutes. Whisk in remaining sauce ingredients. Simmer, whisking, 1 minute, then cool.
3 tablespoons finely chopped onion
1 small garlic clove, minced
戮 teaspoon dried hot red pepper flakes
1 teaspoon vegetable oil
3 tablespoons water
1 tablespoon creamy peanut butter
1 tablespoon hoisin sauce
1 teaspoon tomato paste
戮 teaspoon sugar
