Need peanut chicken recipe...not peanut sauce chicken?

We used to have a really good Chinese restaurant here that served a dish the owner called Peanut Chicken. It wasn't like a lot of Peanut chicken dishes where you make a peanut satay sauce that you dip fried chicken in...it was cut up pieces of boneless chicken that was stir-fried or sauteed in a sauce that had a peanutty flavor and texture. The finished chicken was heavenly... If anyone has a recipe they would like to share with my I would be grateful!Need peanut chicken recipe...not peanut sauce chicken?
Ingredients:


1 chicken cut into serving pieces


1/4 cup flour


1 egg


1/2 cup peanut butter


1 teaspoon salt


1/8 teaspoon pepper


1/3 cup milk


1/2 cup fine bread crumb








Directions:





Coat chicken pieces with flour. Blend egg with peanut butter, salt, and pepper. Gradually add milk, beating with fork to blend. Dip floured chicken in peanut butter mixture, then roll in crumbs. Place in shallow greased baking pan. Bake in 375 degree oven for about an hour or until tender.

STIR FRY THAI CHICKEN





1 fryer, skinned, boned, cut in bite sized pieces


3 c. fresh broccoli, cut in bite sized pieces


1 tbsp. peanut oil


1 clove garlic, minced





PEANUT SAUCE:





1/2 c. chunky peanut butter


1/2 c. water


1 tbsp. brown sugar


1/4 tsp. chili powder


2 tbsp. soy sauce





In small bowl, blend peanut butter, soy sauce and sugar. Set aside. In wok or skillet, heat peanut oil. Add garlic and chili powder. Fry 30 seconds. Add cut up chicken; stir fry until firm and white, about 5 minutes. Add broccoli. Stir fry until bright green; about 3 minutes. Stir in peanut sauce. Cook, stirring constantly another 3 minutes. Makes 4 servings. Serve over hot rice.

Peanut Crusted Honey Dijon Chicken








Ingredients





2 tbsp Butter or margarine





1/2 cup Plain yogurt





2 tbsp Honey





1 tbsp Dijon mustard





1/3 cup Flour





1/3 cup Dry-roasted peanuts, finely chopped





1/3 tsp Paprika





Salt and freshly ground pepper to taste





4 5 ounce Boneless, skinless chicken breast halves or legs





1/4 cup Whole dry-roasted peanuts (optional)


Preparation





Preheat oven to 350 degrees F. Place butter or margarine in a 13x9x2-inch baking dish in oven while preheating. Remove when butter is just melted; set aside.








In a small bowl or pie plate, combine yogurt, honey and mustard. Mix until smooth; set aside. In another bowl or pie plate, combine flour, chopped peanuts, paprika, salt and pepper. Coat chicken in yogurt mixture, covering both sides, then dredge in flour mixture. Place chicken in prepared baking dish, turning to coat with melted butter or margarine. If desired, scatter whole peanuts over chicken. Bake 30 to 35 minutes or until juices run clear.
Hehehe, I know what you're talking about friend. Here's what you're looking for:





5 lbs boneless, skinless chicken thighs


1 C sugar


1 C shoyu (soy sauce)


1 T garlic chili sauce


1 T creamy peanut butter


1 T white miso


2 T mirin


1/2 C chopped green onion


6 cloves garlic, pressed


6 slices ginger, pressed





Combine all ingredients and marinate chicken 4-6 hours. Barbecue over hot coals.





It's good stuff. In case you're not used to cooking Asian food, miso is fermented Japanese soybean paste. Mirin is sweet Japanese rice wine. I know this was made in a Chinese restaurant, but a lot of Asian restaurants throw in food from other cultures. So it's the real deal :)
